Fr. Tim on Relevant Radio

Fr. Tim Alkire from St. Boniface Church in Lafayette, Indiana was the guest spiritual director on the Inner Life, a radio show on Relevant Radio. If you have a chance, go to the audio archives on Relevant Radio and have a listen.  He shares some gems on prayer and family.

Some of you may remember that Fr. Tim married Adam and I, and baptized Therese and Fulton and consecrated them to the Blessed Mother.

And he’s off!

Fulton officially started crawling yesterday!  Wow wee…now two kids to chase after. This is going to make Adoration that much more interesting!

Archbishop Fulton J. Sheen’s Apple Sauce Meatloaf

My funny husband sent me email with a link to Archbishop Fulton J. Sheen’s Apple Sauce Meatloaf and the challenge, “…but how does it compare to my Love’s?  :) ” 

Haha!  So we had meatloaf tonight…

Archbishop Fulton J. Sheen’s Apple Sauce Meatloaf

  • 1 lb. ground beef
  • 4 slices bread
  • 1 egg
  • 1/8 tsp salt and pepper
  • 1/2 cup apple sauce
  • 1/8 tsp. parsley
  • garlic to taste
  • 1 onion, chopped

Preheat oven to 350 degrees.  Shape in loaf on floured board or use cracker crumbs. Bake 45 minutes. (*Note: the website said to “bake until done.”  I found that to be 45 minutes.)

On the Move!

Yesterday our little Fulton took a huge step — to mobility!   He was able to go from lying down to sitting.  Many of you in internet land can’t appreciate that since you can’t remember not being able to sit up from a horizontal position.  Fulton has been scooching along quite nicely and is on the move when he’s motivated enough.

Fulton Sheen Takes a Step

Archbishop Sheen’s process for canonization took a step recently by submitting the first reported miracle to the Vatican. Thank you John and Dad for the news.

Where are the Apostles?: An Experiment with Google Maps

I’ve been working on this experiment off and on, but I’m probably at the point where I could share it. This little test satisfies two of my curiosities:

  1. Where are the remains of Christ’s apostles?
  2. How does the Google Maps API work?

Well, here are the answers. I was quite impressed with the level of detail these maps present at an international scale enabling you to locate sites with pinpoint accuracy (check out Peter’s for example). Click on each individual marker for further information.

You can tell I have a few gaps missing, so if you’re up to the challenge send me on some coordinates. I find Wikipedia to be the most resourceful.

Homemade Granola

Once again frustrated with the addition of SOY in many boxes of granola, I decided to make my own.  I found a few recipes and tried one of them out yesterday.  It is SO yummy I’ll never buy granola again!  This recipe is from “Inn at the Park Bed and Breakfast” somewhere in internet land.

Ingredients:
8 cups quick cooking oats
1/4 cup light brown sugar

2 cups chopped walnuts
1 cup Wheat Germ
2 Tbsps cinnamon
1/2 – 1 cup oil (depending on how much fat you want in it)
3/4 cup honey
1/4 cup pure vanilla extract
1 cup raisins

Mix dry ingredients together one at a time. Combine wet ingredients in a bowl, add dry ingredients and mix until well blended. Spread on two cookie sheets and bake at 325 for about 30 minutes, stirring occasionally. (Watch it carefully, as it will brown very quickly toward the end of the baking time.) Cool, add raisins and store in an airtight container.

 I served it up with some of my homemade yogurt and berries to make a super yummy fruit parfait!  This was also very easy and inexpensive to make.

“Superman Returns” lacking a little virtue

Adam and I managed to have a date night on Thursday.  We went to Alamo Draft House and enjoyed dinner and a movie.  We ended up watching “Superman Returns.”  It was not at all what I was expecting.  It was WAY more chick-flicky than I hoped.  All-in-all the special effects were good.  Storyline wasn’t bad. 

There was only one thing that really turned me off to the man of steel. Upon his return he discovers Lois Lane has a “family”–a son and fiance, Richard, who lives with them who is the boy’s father (supposedly).  From this point, in my humble opinion, Lois should be off limits if only by the fact that there is a child involved who only knows Richard as his father (and vice versa). Knowing this, Clark/Superman still has interst in Lois and even whisks her away from a rooftop for a midnight flight.  Although no kiss is exchanged–it almost happened–and the motives are apparent.  I realize that it takes two to tango and Lois could grow in a little virtue as well.   

The movie ended with everyone where they should be–and I understand that this point is debateable.  Superman and Richard were both heros to the boy and Lois.  I really did like how Richard was developed as a strong, intellengent, loving and supportive partner and parent–perhaps not the man of steel but a man of character.   But it was too bad that Superman’s emotional weakness (Lois) became a moral weakness for him as well.
