Cuban Birthday

I’m a day late here but Happy Birthday, sweetie! At least I have a good reason since we were out late on the town last night to celebrate.

The two of us first enjoyed a nice dinner at Habana. After stuffing ourselves of cuban seasoned pork we headed down the street to Ruta Maya for their one-hour salsa lesson held every Wednesday during ”Cuban Night”. Granted I was the one who needed the lesson since my baby knows how to dance. I think i did quite well however as no toes were stepped on!

Oh, and if you ever want some great Cuban music, Buena Vista Social Club [iTunes] is the album to own.

Come Holy Spirit!

Happy birthday to our Church!   Today we celebrate the decent of the Holy Spirit upon our Blessed Mother and the Apostles at Pentacost.  We invited a couple of friends over last night and had a little pre-birthday party for the Church complete with birthday cake, a 12 fruits-of-the-Holy-Spirit salad, and Sacred Word–Catholic version of the game ‘Taboo.’

We hope that you’ll always have the grace to open up those gifts of the Holy Spirit and let them bear fruit in your lives.

Update: Mixed Messages

A month ago we wrote a post, Mixed Messages, about an incident in our diocese that we found disturbing.  We wanted to update you with what has happened since.

By the time we had made the post, we had already written a letter to our bishop.  We are very fond of Bishop Aymond and have long admired his outspokenness on life issues.  It was for this reason that we decided to bring our concerns to his attention. 

Within a week he had responded to our letter thanking us for the kind manner in which we had brought this to his attention.  He assured us that he was unaware of the guest speaker’s support of IVF.  And finally he wrote, “Please be assured that in everything that I do and that our diocesan staff does we strive to be fully not only in compliance with the teaching of the Gospel of our Catholic Church, but certainly want to promote, without compromise, the pro-life stance of the Church.”

God bless our bishop.

Wanted: Recipes

In the next three months I’m going to be stocking the freezer full of meals in anticipation of Baby G’s arrival.  So I need your help with recipes of meals that can be frozen and easily prepared.  It has to be easy enough to prepared out of the freezer for my hubby who hasn’t cooked in 5 years!  He’s pretty good at boiling water, using the steamer and turning on the oven. 

Things already on the list are:  Lasagna, spaghetti meat sauce, beef and chicken chili, hamburger patties, meatloaf, enchilada sauce, potstickers, chicken potpie, bread, and pizza dough (hmm…maybe even pizza bread).

So please, please, please, please, please, either leave a comment below or for those reader who don’t like doing that (and I know you exist), email them to me.  I’ll even make another contest out of it, if that will inspire more comments–the dish that the whole family deems the best (i.e. that the kids will eat too), will get their choice of homemade ice cream/gelato.

A Riddle: We have a winner

Congrats to Elizabeth for solving the riddle.

No, it’s not some crazy PHP Web application and no I have not tired of my bike excursions to work. The italian (and latin) word for “wasp” is vespa – I have a Vespa scooter.

This is a 1974 Vespa Rally 200. It’s considered the last of the “vintage” scooters produced by Vespa before the introduction of the P-series in the late ’70s. As you can imagine one of these is pretty difficult to find. This one hailed from Salt Lake City, UT and is in surprising good condition – yet it is a restoration project. I haven’t decided on an engine rebuild but the frame certainly needs some work. First task is to rebuild the carburetor and replace the jets with the originals as they’ve been modified for higher altitudes.

I’m really looking forward to this project, even though I don’t have a defined timeline for completion. I’ll be sure to keep you all posted with my progress.

Yes, Elizabeth, we’ll make gelato for the whole family but remember, the terms were you’d have to come visit us. ;)

Novena to Holy Spirit

Pentacost is only a couple of weekends away!  And you know what that means…

The Novena to the Holy Spirit starts this Friday!  (Yes, I’m a novena nerd.)  According to the EWTN website, it’s still the only novena officially prescribed by the Church.   May you wake up on the Church’s birthday to unfold all the gifts of the Holy Spirit this year!

Shoe Phantom

Growing up my dad would often lose track of his shoes and slippers. After an exhaustive search throughout the house the query would eventually come:

“Where did those kids put my shoes?!”

Of course we would just roll our eyes thinking to ourselves, “yeah, as if we ever touch them.” Well, now that I have kids of my own I’m beginning to think his speculation had merit.
