Keep on Grillin’

When we bought our home four years ago our good friend Mark loaned us his old grill for our house warming party. After the party he decided to gift it to us instead of hauling it home. Well, we’ve held on to it since then and gotten good use out of it. However we noticed a lot of the parts have began to rust over and the rubber gas line was cracking. We wondered if it was time to move on to “bigger and better”.

Any normal guy at this point would jump at the chance, but I tend to like getting all the use out of something as long as I can. And besides, grill prices are at their high at this time of year. To get us through the summer until we can hit the sale prices in the fall, we were able to replace a lot of the parts and get the ol’ girl in working order:

First Harvest!

We harvested our first round of snap peas!  Oh and are they yummy!!  It wasn’t a whole lot.  And Therese probably ate half of them as she was sneaking back into the house after we washed them to keep getting more.  But there are more on the vines.

 I also realized that I’ve been too lax in loosening the soil as the peas seem to have developed yellow leaves near the roots that result from poor drainage. 

We have two tomatoes still going strong and the runner beans are about to flower!

Pizza Variation

I really like making pizza.  Adam and the kids usually enjoy it too when it involves greasy red meat and lots of cheese. 

I love having my girlfriends over for pizza because it gives me an opportunity to experiment with more interesting ingredients.  So girlfriends out there, come on over for a pizza party whenever you like!

 I had my friend Shana over for lunch yesterday.  So I tried something a little new that I thought was super yummy.  I made four individual sized pizza for all of us.  Besides pepperoni and cheese, and BBQ chicken, I made a couple of Spinach & Tomato pizzas.  Here’s the recipe:

 Ingredients: 

  • Store bought or homemade pizza dough 
  • Tomato Basil Feta Cheese
  • Olive oil (1-2 tbs)
  • Spinach (frozen that has been thawed or fresh)
  • Sliced tomatoes
  • Mozzarella Cheese
  • Cubed cooked chicken breast (optional)
  • Red Onion (optional)

Note:  I didn’t put the amounts of the ingredients because everyone likes different amounts of stuff on their pizza.

If you made your pizza dough from scratch or bought your pizza dough raw, roll out the dough to desired size and bake for 10 minutes on 400 degrees F.  When done, take out of over and lightly brush the pizza with olive oil.  Add feta cheese, mozzarella cheese, and other toppings in your desired amounts.  Bake for another 10-12 minutes.

Mini-vacation

We just got back yesterday from a long weekend in Corpus Christi visiting my brother who lives in Portland, a small town just north of there.

Although the original motive was to go fishing, we didn’t quite make it there, but we did manage to fill our time with a lot of fun stuff.  We would have gone fishing but the currents were too strong and my brother said we probably wouldn’t have caught anything.  So we’ll go back again for the fishing soon. 

I must admit that I didn’t think there was a lot to do in Corpus but I was wrong.  Our first stop on Saturday was the Science and History Museum.  They have two replicas of Columbus’ ships that you can tour–The Santa Maria and the Nina.  They were made in Spain and not exact replicas, but they are ship that would have been of the time period.  It was a short tour (only around 30 minutes) but it was neat and easy with the kids.  Then there’s the museum.  They have some family arts and crafts on Saturdays, so I did that with Therese while Adam chased Fulton around.  It also had a little interactive exhibit for children.

On Sunday my brother took us to Mustang Island just a little north of Corpus…there was a barrier of seaweed on the shore but I’ll take that to the jelly fish.  Apparently in the summer and fall there’s lot of jelly fish close to the beach and some dead jellies on the beach.  So getting stung is not uncommon even by dead ones on the beach.  The kids went wild playing in the sand.  They weren’t as excited about the water as Adam was, but had a great time playing anyway.

Yesterday, we went to the Texas State Aquarium.  The kids really enjoyed that too. Even though Therese never got to see the star fish, she got to see hermit crabs, sea urchins, and sting rays up close.  It takes about a half day to see everything with their shows/demonstrations and they had a wonderful playground for all ages of kids.

And if you’re even in Corpus Christi on a weekend and looking for a Mass, may we suggest the Corpus Christi Cathedral. It was an awesome Mass.  In Austin, people often say, “There’s Sunday Mass and then there’s Mass at St. Louis,” because St. Louis’ high Mass is so elaborate.  Well, I’d say there’s St. Louis Mass and then there’s Mass at the Corpus Christ Cathedral.  The music itself is quite impressive, but the Church is also very traditional in its architecture.

And here are the kids getting along in the car…what a blessing!

“But I just wanted to…”

I hate to lose my temper.  Unfortunately, losing my temper is one of my biggest vices–right next to losing my patience.  It’s that one sin that I hear myself repeating in confession above all others. 

When I realize I’ve lost my temper, I immediately apologize to my poor kids or husband, whomever I unleased my wrath upon, humbly asking for their forgiveness.  But the most painful and meaningful penence I get is when my little girl say, in a voice that only a three year old can muster, “Mama, but I just wanted to…” 

Thank you Lord for these little voices, often not my own, that lead me to be truly sorrowful for my sins and repent.

Sciatic Nerve ouchies

Well it appears that I may be having issues with my sciatic nerve.  Last night I developed a painful bruise on my foot that has since made my toes and lower leg all tingley.  Joy.  :(

The sciatic nerve is a long nerve that runs from the lower back to the back of the legs and feet.   Some of the symptoms of sciatica during pregnancy include:

  • Pins and needles in the lower back or leg, possibly the affected foot.
  • Shooting or burning in the leg, buttock or lower back.
  • Pain in the lower back or back of the pelvis that may extend into the foot.
  • Numbness in the leg or feet.

I have an appointment with a neurologist tomorrow.  I hope this is all that it is.  Although none of the symptoms included brusing.  That’s the one thing that concerns me.
