I’m a Graduate

Today, I just completed the Basic Rider Motorcycle Safety Course. I took a similar course about 10 years ago in Indiana but haven’t been on a bike since so this was a great refresher.

In Texas, riding a scooter over 50cc on public roads requires a motorcycle license. Taking the safety course waives the driving test at the DMV when applying for your license – however you still need to take the written test. This is not the only benefit of the course. You really do learn a lot of great techniques and strategies for riding safely. No prior experience is required to enroll, so if you’re interested at all in riding on two wheels, this is the place to start. There were 6 hours of classroom work and 10 hours of riding practice on a controlled, off-street environment.

I further recommend MotoFun for Austin area trainers. The instructors were a lot of fun and very knowledgable. They take the time to make sure every individual is given the attention s/he needs. Not to mention they provide scooters, which I was the only one in my class of 12 to use. The scooter was automatic, so I missed out on the full experience of exercises involving gear shifting. Luckily they gave us a set of exercises for parking-lot practice so I’ll certainly be going over those on the Vespa.

Apple Crumble Pie

Here’s a quick and easy Apple Crumble Pie recipe Adam and I snatched off of cooks.com tonight for a yummy way to eat some of those Granny Smith apples that were filling our fruit basket.  And don’t forget to top with some vanilla ice cream.

 Ingredients:

1 frozen pie crust
6 to 7 tart apples
1/2 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg

Crumble Topping:

3/4 c. flour
1/2 c. sugar
1/2 c. firm butter

Directions: Preheat oven to 450 degrees. Peel apples. Cut into slices approximately 1/2 inch thick. Put slices in crust. Stir together sugar, cinnamon, and nutmeg. Sprinkle over apples. Top with crumble topping. Bake 30 to 40 minutes until edge is golden brown and apples are tender.

Can be made in pizza pan or cake pan or pie pan. Does not hold together in slices like regular apple pie.
